The origin of black dragon oolong tea goes back about 400 years ago to Fujian Province in China at the end of the Ming Dynasty. In particular, the area around Mt. Wu Yi Shan. Now it has been transfered to Anxi oolong tea plant. Although we call it as a oolong, it is actually a transition between oolong and black tea. As we know, black tea is fermented tea. Fermentation is done to enhance the body, color, caffeine and tannin level of the tea. Black tea is much fuller bodied and richer in flavour than green tea. Withering, rolling, roll breaking, fermentation, firing and sifting are the six operations of this process. Each operation is crucial and time consuming in its own right- but essential in deciding just the right flavour and grade. Oolong tea is fermented only 20-75% depending on where the tea is from. Oolong has a similar taste to a black tea, although some varieties may taste more woody or dusty. Oolong is not as full bodied nor does it have quite as much caffeine as black tea. It is in between a green tea and black tea as far as flavour, body and color are concerned. In regards to the black dragon oolong tea, it is fermented 85%.
As this is a combination of black and oolong, we can find characters of both types. Noticeably large, thick leaves mark this distinctive oolong variety. It has dark robust leaves, very well processed into even, curly stripes. Dark brown colour with deep red touch at the edge of the leaves. Black dragon oolong will amaze you with its warm roasted aroma and a noticeable sweet taste developing in your throat and then at the back of your tongue. Fenghuang Dancong is a select oolong tea from Guangdong province and was a tribute tea in the Song Dynasty. The leaves are harvested from a strain of trees that have been selected for careful breeding as straight trunk trees. These trees have a single trunk that rises straight up and the branches form an umbrella, making harvesting the leaves particularly difficult. Pickers use tall ladders or must climb the trees to harvest the long leaves.
This strain is light and slightly astringent, with a hint of tropical fruit. This tea absolute delight, from the lovely black leaves, to the complex aroma of the infusion which is a lovely golden yellow liquor, with a complex delicate woody, fruity taste. Tea garden of red oolong is located in Luye, Taidong, Taiwan. The altitude is about 1000m a.s.l. Tea garden gets sun shine only in the morning whereas from the afternoon onwards, the entire tea garden is covered by a thick fog. Due to the fog and higher altitude, the taste and flavor of the tea is very thick and it gives a very smooth drinking feeling.
Tea leaf consists of 1 bud and 2 leaves.Crafted by skilled farmers, this oolong was skillfully hand-plucked and slowly batch-roasted over a bamboo charcoal pit for an unsurpassed flavour and aroma. The aroma of the dry leaves is nutty and slightly smokey. The liquor of the tea is a beautiful red, and the flavor is sweet with notes of caramel and dried fruit.
When infused, the aroma was at once spicy then fruity, followed by a residual presence of wheat fields. This tea presents toasted grain-type elements layered on top of a deep, penetrating spicy-sweetness that reminds me of sweet, highly perfumed, oily spices like cinnamon or clove in both the flavor and aroma. Scents of chestnuts, dried wood and green forest growth give way to smooth, mellow flavours of spearmint, dry lemongrass and some minerality. The finish is roasty with a distinct mint-chocolate note. The mouthfeel of the infused tea liquor is moderately thick and smooth, and the "hui gan" , or sweet aftertaste that comes after the initial bittersweet flavor fades, is beautifully sweet, spicy, and quite long lasting.
Like all great oolongs, this tea reinfuses with ease. Red oolong is a heavily roasted and deeply oxidized oolong tea, it is ideal for further aging.

Wuyi tea has a long and glorious history. Song dynasty's poets Fan Zhongyan and Su Shi both alluded to its fame and tribute tea status as early as the 11th century. When the Mongolian calvary lorded over China in the 14th century, an imperial tea garden was set up on Wuyi Mountain to cater for the emperors. According to William Ukers, who wrote All About Tea in 1935, Wuyi oolong tea was one of the first teas to be exported to Europe in the early 17th century.
Wuyi oolong tea is one of China's 10 famous teas. It belongs to a family of teas from northern Fujian Province called Mingbei Oolong. The tea leaves in this family are long and curly rather than ball-shaped, and are more oxidized and roasted than their southern cousin Tieguanyin. It has an unique taste called Rock Rhyme (Yanyun), so called because of the high mineral content of Wuyi Mountain. In China, the unique flavor is often described as "crag bone floral fragrance". The body is mellow with an outstanding orchid fragrance. The aftertaste is long lasting and rock-like.

Most competition teas are sold out before or soon after the awards are publicized. And for most competitions, it's extremely hard to get the top award teas. All teas are submitted by farmers or tea merchants who are directly related to tea farmers. The honor goes to the farmers and local factories, the real producers

Because of this constant change, the tea master must anticipate the changes and stop the process before the tea reaches its best. Too long and that perfect flavor will disappear, but too short and it will never attain its pinnacle. It is a subjective process that takes lots of experience, plenty of patience, and a bit of luck!
